Game Day Meal Ribs

I love watching sports. My boyfriend introduced me to Rugby this week — just in time for Six Nations 2022. Yesterday, our team, France, beat Ireland 30-22 in a nail-biting match. I’m still trying to learn all the rules, but I gotta say that I’m already hooked!

In addition, the Beijing Winter Olympics and Super Bowl Sunday are going on at the same time. Admittedly, I don’t really watch American Football, but I adore winter sports (cheering for Canada and France now!).

While watching games, it’s nice to change it up from pizza and the usual snacks for a real meal. For our game day meal, we kept it simple and fun with homemade pork ribs with a tangy honey-garlic sauce and buttery beans!

Prep only takes a few minutes. In the meantime, you can sit back and enjoy your favourite sports while your oven does all the cooking for an hour and a half. The meat literally falls off the bones and these ribs are bursting with flavour. The best part? My boyfriend described the ribs as “perfect”!

Game Day Meal Ribs

INGREDIENTS

Dry Rub

1 small rack of ribs (6 ribs in France are ~0.66kg)

Sea salt

Freshly ground black pepper

Mild paprika

Sauce

2 heaping Tbsp of honey

2 shot glasses of soy sauce

2 cloves garlic, finely chopped

Freshly ground black pepper

Pinch of piment d’espelette or cayenne pepper

2 heaping tsp Dijon mustard

INSTRUCTIONS

  1. Rinse rack of ribs with water, then pat dry. If there is silver skin, you can remove it (optional).
  2. Rub all surfaces of meat with lots of salt, pepper, and enough paprika to cover everything. Let rest for 10-20 minutes, while oven heats. Wrap with aluminum foil and place on a baking pan with meat-side down (bones facing up).
  3. Heat oven to 160C, with fan on. Once hot, put meat in oven and set timer for 1h25. After about 30 minutes, turn down heat to 150C and continue to cook.
  4. In the meantime, make the sauce. Combine all ingredients and stir well. Let sit at least an hour to let flavours develop.
  5. Once your timer goes off, remove meat from oven and unwrap. Dispose of liquid and place the rack meat-side up. Cover with sauce and make sure to use all the pieces of garlic; you can save a bit of sauce for dipping later. Do not re-wrap with aluminum.
  6. Broil for 5-6 minutes, until a nice deep colour. While waiting, cook green beans with butter.
  7. Take meat out of oven and let rest for a few minutes.
  8. Slice, serve, and enjoy your game day meal!
