As my blog name implies, I am a busy girl, who still tries to have a healthy lifestyle. There are many times where I am running in between work, meetings, the gym, dance classes, and hangouts with friends without much time to prepare my own food or to scope out a healthy restaurant.
In addition, more and more of my friends like to host potlucks when we get together. While they are tons of fun, the extra stress of trying to carve out time for meal prep can be a bit daunting.
That is why I am so thankful that my local Loblaws has an extensive grab-and-go section! Roast chickens, different kinds of wings, dozens of (seriously delicious) salads, sandwiches, eggs, fish, and more are prepared and ready to order. You can choose whatever size container you like, from side-sized to platter-size, and you can mix and match items to have complete meals.
Their options are not only yummy but are also pretty healthy too.
I personally love their chickpea salad, as it tastes a lot like the ones I make from scratch. With sundried tomatoes, cherry tomatoes, fresh herbs, red onion, roasted artichoke, and crunchy cucumbers, it’s sooooooooo good! When I’m rushing off to a potluck, I like to grab a few trays, and add in a few extra ingredients to make my own twist (and to make it look a little less obvious that I didn’t make it myself 😉 )!
This time, I needed enough salad for 15-20 people. I brought home two trays of chickpea salad and added:

One medium container of pitted kalamata olives, scooped from the Loblaws olive bar

A small jar of PC Splendido Sun-Dried Tomatoes In Seasoned Oil, coarsely chopped, including a few spoonful’s of oil

A whole block of PC Feta Cheese in Brine
It literally only took a few minutes to toss together!
